INGREDIENTS
- 2 cups butter, at room temperature
- 2 cups confectioners’ sugar
- 2 large egg
- 5 tsp. vanilla extract
- Zest of lemon
- 5 cups all-purpose flour
- 2 tsp. salt
- Mix butter and confectioners sugar together until smooth.
- Add in the egg, vanilla and lemon zest
- Mix in the flour and salt on low speed just until incorporated
- Roll dough into two balls, flatten, wrap om plastic wrap
- Refrigerate until chilled (1-2 hours) or freeze for faster results (30 minutes)
- Preheat the oven to 375˚ F. Line baking sheets with parchment paper.
- Roll the dough out about ¼-inch
- Cut with cookie cutters and transfer to the prepared baking sheets.
- Bake 8-10 minutes, rotating the sheets halfway through baking (DONT brown)
- Allow to cool on the baking sheet 5 minutes, then transfer to a wire rack to cool completely.
