Pumpkin Olive Oil Loaf

Ingredients:
  • Softened unsalted butter and all-purpose flour, for preparing the loaf pans
  • 3¹⁄₃ cups all-purpose flour
  • 2 teaspoons baking soda
  • 1½ teaspoons salt
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground ginger
  • ½ cup (4 ounces) unsalted butter - Melted & Cooled
  • 3 cups sugar
  • 2 cups pumpkin puree 
  • ²/3 cup water
  • ½ cup olive oil
  • 4 large eggs, at room temperature
  • Raw pepitas (pumpkin seeds) and turbinado sugar, for garnish
Directions:
  1. Preheat the oven to 350ºF. Grease 1 9 x 5-inch loaf pans with softened butter and line 1 cupcake tin with tins.
  2. Combine flour, baking soda, salt and spices. Set aside.
  3. blend the sugar, pumpkin puree, water, olive oil and melted butter until smooth. 
  4. Add the eggs, 1 at a time
  5. Add the flour mixture in 3 batches until smooth
  6. Fill prepared pans
  7. Top with the pepitas and turbinado sugar.
  8. Bake loaf for 60 to 65 minutes, or until a toothpick inserted in the center of the loaf comes out clean.
  9. Bake muffins for 25-30 minutes, or until a toothpick inserted comes out clean

Pumpkin Banana Bread

Ingredients

  • 3 cups Flour
  • 2 tsp Baking Soda
  • 1 tsp Salt
  • ½ tsp Baking Powder
  • 1-½ tsp Cinnamon
  • ¾ tsp Ginger
  • ½ tsp Cloves
  • ¼ tsp Nutmeg
  • 3/4 cup Sugar
  • ½ cups Light Brown Sugar
  • ⅔ cups Vegetable Oil
  •  Eggs
  • 1 cup pumpkin puree (from can)
  • 4 Medium ripe bananas mashed
  • Optional: Raw sugar, pumpkin pie spice, pumpkin pepitas (for dusting loaf)

Directions

  1. Preheat oven to 350
  2. Combine flour, baking soda, salt, baking powder, cinnamon, gingers, clove, and nutmeg.  Set aside
  3. Beat sugars and oil together
  4. Mix in eggs
  5. Mix in pumpkin
  6. mix in mashed bananas
  7. Fold in flour, 1/2 of the mixture at a time.  Don't over mix.
  8. Fill 12 muffin tins 3/4 full
  9. Use the rest of the batter in a 9x5 loaf pan.  
  10. Optional: Sprinkle the loaf with raw sugar, pumpkin pie spice and raw pumpkin pepitas.
  11. Bake muffins for 30 minutes 
  12. Bake loaf for 60 minutes or until knife comes out clean

Banana bread with olive oil

Ingredients
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup sugar
  • 4 ripe bananas
  • 2 teaspoon vanilla
  • 1/2 cup olive oil
  • 1 teaspoon cinnamon


Directions
  1. Preheat the oven to 350 degrees F. 
  2. In a medium bowl, combine the flour, baking soda, baking powder and salt. 
  3. In a large bowl, cream together the eggs and sugar. Stir in the mashed bananas, vanilla, oil and cinnamon. 
  4. Stir in the flour mixture, until just combined.  Less is more.
  5. For muffins, bake for 17 minutes or until knife comes up clean.   For one loaf, bake for 60 minutes or until knife comes up clean

Banana Cake

Moist and bananay, this cake will make you smile. Carin made this for us, and we gobbled it up. She had to make a second one the next day. I keep buying bananas, hoping they will get overripe and another banana cake will be made.

It's the perfect way to relax when served with coffee or tea, but you can also serve on its own as a dessert.

Ingredients
3 eggs
4/5 cup (2 dl) sugar
2 tsp vanilla (or vanilla powder)
2 tsp baking powder
1 tsp cinnamon
1/2 tsp salt
4 very ripe bananas
7 tbsp (100 g) butter
2 cups (5 dl) flour
2/5 cups (1 dl) milk

Directions
1. Melt butter
2. grease loaf pan with butter and sprinkle with flour
3. Mix eggs and sugar
4. Peel and mash the bananas with a fork
5. Mix the bananas, butter, and milk
6. sift in the flour, baking powder, cinnamon and salt into the banana mixture
7. Pour mixture into the pan
8. Cook at 350 F (175 C) for 45 minutes

Blueberry muffins with streusel

Some friends just had a little girl, and I wanted to put together a little basket of goodies to bring to the family. I knew I was going to bring some of my mom's banana bread, but I also wanted to bring some blueberry muffins too. I stumbled upon the recipe below through Annie Eats (who found it on allrecipes). This is very tasty and very easy to make. I highly recommend giving it a try.

Blueberry Muffins

Ingredients:
1 1/2 cup flour
3/4 cup sugar
1/2 tsp salt
2 tsp baking powder
1/3 cup vegetable oil
1 egg
~1/3 cup. milk
1 cup blueberries (or more)

streusel topping:
1/4 cup. sugar
8 tsp flour
2 tbsp butter
3/4 tsp cinnamon

Directions:
Preheat the oven to 400°. Grease or line 8 muffin wells with muffin liners.

Combine flour, sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with flour mixture. Fold in blueberries. Pour into lined muffin cups; fill to the top.

To make streusel topping, combine listed ingredients and mix well with a fork until crumbly. Sprinkle over tops of muffins.

Bake at 400° for 20-25 minutes.

Mom's Banana Bread

I love my mom's banana bread. Here's the recipe:

Ingrediants
1/2 cup butter (113 grams), softened
1 cup sugar (2.4 dl)
2 eggs
2 cups flour (4.8 dl)
1 teaspoon baking soda
3 mashed bananas (I often use four) The riper the banana, the more "banana-y" it will taste
1 teaspoon vanilla
1 cup chopped walnuts (i never use walnuts) I have used chocolate chips on occasion.

Directions
Grease one 9 x 5 x 3 inch loaf pan or two small loaf pans. Preheat oven to 250 F (or 121 C) degrees (I think the secret is cooking the bread for a long time at a low oven setting).

Combine butter, sugar. Cream mixture. Add eggs and bananas. Blend well. Add remaining ingredients. Bake at 250 degrees for 1 1/2 hours until lightly browned.
